When I saw this picture of these hashbrowns nests I thought 2 things: Wow, those look beautiful & delicious and they also look like way too much work! But I read through the recipe and actually, it seemed very manageable and able to multitask the steps so I decided to go for it. Boy am I glad I did!!!!!! These we're even better tasting than they looked and very simple. Also, it's easy to customize it to your personal taste. I'm not a big fan of sun-dried tomatoes so I used roasted red peppers instead and added some chopped hot cherry peppers for a little kick...perfection! Definitely take the risk and try this recipe...you won't regret it.
I made these and they were exceptionaly delicious! I didn't have goat cheese at home so i used feta cheese. It turned out really yummy... i loved the saltiness the feta cheese added!

Turned out great but I started with fresh potatoes, shredded, Fresh spinach wilted and squeezed dry, fresh garlic and green onions before the spinach mixture. My goat cheese was bad so used feta on half and parmesan on the other half. Went great with steak.
I made these for Christmas Day and we all concluded that they were very bland. I made 2 dozen in mini muffin tins and used about half the hash browns and all the filling. I had a note to add bacon but forgot:(
I added a piece of chopped cooked bacon in the spinach mix. We really liked these.
These were delicious! The crispy potato nests were the perfect vehicle for the creamy spinach and goat cheese filling. The sundried tomatoes added a lot of flavor. I could see these served at everything from breakfast to mini versions served as appetizers.
