This is a tasty and healthy salad. You can use feta cheese (or whatever kind you like) in place of the goat cheese. Balsamic or blue cheese dressings go nicely with this.
- 8 ounces fresh spinach, rinsed and dried
- 1 yellow bell pepper, diced
- 1 cucumber, sliced
- 1 (15 1/2 ounce) can chickpeas, drained and rinsed
- 1 tomatoes, chopped
- 4 ounces goat cheese
- 1 avocado, sliced
- Combine all ingredients in a bowl and toss with your favorite salad dressing.
This was a meal in itself! I loved all the flavors and used Catalina dressing. I used red bell pepper instead of yellow. The goat cheese was so good with it. Thanks! Made for PAC-Sept. 2009.
