Another left-over chicken recipe to try. Dressing makes a lot for the amount of chicken - save some for later.
- 1 1⁄2 cups baby spinach leaves or 1 1⁄2 cups mixed greens
- 4 cups sliced chicken breasts
- 1⁄2 cup toasted pine nuts
- 1 teaspoon dried tarragon
- 1 teaspoon grated lemon, rind of
- 1⁄2 teaspoon ground nutmeg
- 2⁄3 cup olive oil
- 2⁄3 cup white wine vinegar
- Mix dressing well.
- Toss with first three ingredients.
