Spicy Vegetable and Quinoa Laksa

"Hearty soup to scare away the winter chills. Quinoa (Keen-wah) is a high protein grain making this an ideal dish for vegetarians. Once cooked it can be cooled and frozen for upto a month but if you do you MUST use fresh vegetable mix."

directions

  • simmer onion and curry paste with a splash of water for 5 mins stirring occasionally.
  • Heat milk in a pan or microwave.
  • place everything in a large pan and bring to boil. simmer for 10 minutes.
  • season if desired and serve with naan bread.

How I rate... 5 stars - perfect, will make again without any changes. 4 stars - Liked it, will make again again but with changes. 3 stars - had to make major changes but got it to work. 2 stars - had to make major changes and it didn't work. 1 star - went terribly, a waste of time and ingredients, I cried, BF cried the cats cried you get the picture...
