Funny how you start looking for something and find something even better than what you were looking for! This sounds execellent and I plan on making it soon! Note: Prep time includes minimal chill time

  1. Cook Udon noodles in a large pan of boiling water about 5 minutes, or until just tender. Drain and rinse with cold water. Chill.
  2. Combine tamari and sesame oil in a small bowl.
  3. Combine noodles and vegetables in another bowl and toss with dressing.
  4. Sprinkle with peanuts and sesame seeds and drizzle with Szechuan sauce.

It is very very salty if you use 2 tablsps soy sauce and 2 tblsps szechuan sauce.You might want to try one tblsp each and add more if it is not right for you.
