  1. drain and press tofu.
  2. cut tofu lenthwise into two pieces.
  3. coat pan with cooking spray and heat over medium heat.
  4. add tofu to pan and sprinkle liberally with cajun seasoning.
  5. cook until crispy and browned.
  6. serve on toasted bread with mustard, baby spinach leaves and red onion slices.

I loved this sandwich! I used smoked tofu and added a few basil leaves to the spinach. I especially loved the "bite" from the red onions. Thanks for a great combo!
