    Directions:

      Combine Cajun seasoning, salt, and pepper in a small bowl. Sprinkle fish evenly with spice mixture. Put fish in Zip N' Steam Bag cook for about 9 minutes in the microwave or until fish flakes easily when tested with a fork or until desired degree of doneness.

      Combine pineapple and next 5 ingredients (through jalapeño) in a large bowl, stirring gently.

      Serve pineapple mixture with fish. Garnish with lime wedges.

      We really loved this, I used all the ingredients except the rice vinegar, (I was out) it was still good, but I think it would have been better. I'm not big on microwaving food so I baked (recommend covering) the seasoned fish, tomatoes, jalapeno, and pineapple together, broiled them at the end to brown the pineapple a bit. The onion I sauteed in a small skillet and added it at the end with the cilantro and lime. A very good flavor combination.
