For Salad
- 473.18 ml cooked chicken breasts, chopped (about 1 pound)
- 473.18 ml red bell peppers, strips
- 236.59 ml sliced celery
- 236.59 ml thinly sliced red onion
- 236.59 ml sliced cucumber
- 118.29 ml coarsely chopped fresh cilantro leaves
- 198.44 g package Italian salad mix

For Dressing
- 44.37 ml fresh lemon juice
- 29.58 ml fish sauce
- 14.79 ml sesame seeds, toasted
- 4.92 ml sugar
- 4.92 ml ground ginger
- 2.46 ml crushed red pepper flakes
- 22.18 ml olive oil (optional)
directions
- Prepare salad by combine salad ingredients in a bowl.
- To prepare dressing, combine lemon juice and remaining dressing ingredients, stirring with a whisk.
- Drizzle the dressing over salad and toss well.

Made this last week for a few friends. I really liked the concept but we ended up doctoring the sauce up with more honey, sesame oil, and black vinegar. Was really enjoyed, will make again and possibly add crunchy strips of wanton for an extra punch. Thanks for posting this healthly, no waiting, dinner/lunch option.

It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
