My family loved these - and they are not fans of sweet potatoes. I substituted coarse black pepper for the cayenne. I did not peel the potatoes and they were delicious. I am adding these to the frequent menu.
Love sweet potatoes prepared this way. If you have any leftovers (which I doubt you will) they rewarm very well. This is my hubby's favorite recipe for sweet potatoes.
I used Louisiana grown sweet potatoes. You should come visit Louisiana. I can guarantee an extraordinary experience and maybe some Cajun buffoons.
A tasty side for Christmas-- and definitely better than casseroles that load the sweet potatoe with butter, sugar, marshmallows. Mine did turn out a little mushy-- but that's my fault. I have issues with knowing when the sweet potatoe is done and often overcook to the mushy point. Thanks for a nice recipe!
Great tasting potatoes! Although next time I might use a little less cayenne pepper. Mine were done cooking after 25 minutes - maybe I cut mine too small. Will definitely make these again. Thank you for sharing!
incredible taste! these were fabulous and we could not stop eating them. these will be one of our favorites. the only change i made was to substitute chipotle chile pepper seasoning for the cayenne which i was out of.
This is a great recipe!! I didn't peel the potatoes and I covered the baking dish with aluminum foil for easy clean-up. Other than that, followed recipe exactly with spectacular results. Couldn't stop eating these! Could serve as a side with chicken, fish, beef. Very versatile!!!
