I first had this with a fish dish - I wish I could remember which one!
- 2 small sweet potatoes (3/4 lb)
- 1 teaspoon olive oil
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon fresh ground black pepper
- 1⁄8 teaspoon cayenne
- 1⁄8 teaspoon cinnamon
- Preheat oven to 500 degrees F.
- Peel potatoes and halve lengthwise, then cut each half lengthwise into 4 wedges. Place oil, salt and spices in ziptop bag and squish to combine. Add potatoes and toss to coat. Place potatoes in shallow baking pan and roast in lower third of oven, turning over halfway through roasting, until tender and browned, 15 - 20 minutes total.
Perfect taste, appearance, easy, and healthy! I love sweet potatoes and the touch of cinnamon. Made as posted and had them in the oven for over 20 minutes. We had ours with Marinated Grilled Pork Chops, Cabbage on the Grill, and Sandra's Key Lime Pie for a nice summer meal. Thank you Kymmarie for sharing a keeper! Made for I Recommend Tag.
I made these for the second time tonight and we just LOVE them! I love sweet potatoes in any shape or form but my hubby's not so easy. He loves the unique spice and I love the low calorie count. Great recipe!
Excellent! This has only 1 WW point per serving. It has a wonderful combination of flavors. Sweet and hot. Nice kick to it. Served it with steamed broccoli, 2 pineapple slices heated in some of it's own juice and Ww Ham Steak With Pineapple Sauce 4-Points for a total WW meal of 6 points. Thanks Kymmarie for posting.
