Spicy Sweet Potato Puff

"Feel free to omit the chipotle pepper, but it adds a little something extra. This Christmas, I added the whole pepper, and our finicky toddler loved the end result."

  • Preheat oven to 400 degrees.
  • In a large mixing bowl (I use an electric mixer), mash the sweet potatoes.
  • Add the remaining ingredients and blend until smooth and creamy.
  • Spread mixture into a greased 9x9 inch casserole.
  • Bake for 20 minutes or until set.
  • While puff is baking, combine ingredients for topping.
  • After 20 minutes, or once puff has set, spread topping over puff and bake for ten more minutes.

  1. Made this again last night. I cut the amount of pecans down to probably 1/2 cup and added 3/4 to 1 cup gluten free corn flakes that had been broken. Took the recipe to a pot luck and it disappeared quickly.
