Delicious! I stuck with the basic recipe except that instead of rosemary (not my favorite herb), I used garlic powder, cayenne and sugar (actually xylitol) to give it a spicy-sweet flavor. I broiled it for the last few minutes to help crisp the edges. The thinnest wedges turned out the most crispy (I recommend 1/2"). Next time I'm only to use regular salt instead of coarse because it's not as strong. The basic recipe (olive oil, heat, timing, etc.) was just perfect! The flavor and texture of these fries was delectable. I plan to experiment with more seasoning combinations, such as fresh garlic and parsley.

Made version #1, but with Greek Seasoning instead of rosemary. Tasty, but did not get as crisp as I thought. Overall flavor and cook time is right on.

These were so good! I made the first version and loved the rosemary flavoring with the sweet potatoes. My husband, who normally won't eat sweet potatoes, devoured these.

I used garlic salt and ground red pepper (instead of flakes) and these are SO good. My husband isn't crazy about sweet potatoes and he loves these. Thanks Derf.

Oh Boy..are these yummy! I took the suggestion of one of the reviewers and tried a combo of cayenne pepper, garlic powder, and sugar. I did half the batch that way, the other half I used the spicy pepper cumin one. With both batches I used Pam instead of oil to lower the fat content. I put the raw potatos on foil-lined baking sheet, sprayed top, tossed around, and ten put them in bag with seasonings. The rest went like clockwork...just perfect. These were loved by all my students and myself. They will become a regular item in this household. Thanks loads, Derf.

Sweet Potato is not a vegetable that I have used a lot. but lately I seem to have found a new taste treat and this recipe really peaked it. I made option three "Spicey pepper cumin" and it was delicious. Baked on an oven stone and served with Deviled Chicken Wings Devilled Chicken wings - great combo. Thanks Derf for yet another recipe that I will enjoy over & over
