This went down SO well in my household. I made this ahead of time, and just threw it into the oven a half hour before we wanted to eat....easy!
I was a little perturbed when I started throwing the cheese into the mixture, thinking that it looked like it just wasn't going to melt, and I was going to end up with a big gloopy mess, but, slowly but surely the cheese melted down into smooth gooey yumminess.
DH loved it, and snaffled the leftovers to take to work for his lunch the following day-that's a compliment!!

  1. Preheat oven to 350.
  2. Sauté red peppers, green peppers and onion in a small amount of chicken broth until soft.
  3. Add Velveeta and stir until melted.
  4. Add peas and carrots, chicken, broth, and tomatoes.
  5. In a 9x13-inch pan, combine the above with the cooked spaghetti.
  6. Bake for 30 minutes.
