This is great! We have a ton of Soba noodles so I was looking for a cold noodle salad. We love spicy so I picked this. The sauce was made to the T and then I added a touch of rice wine vinegar. We mixed it all with tofu chunks, carrot, cabbage, snap peas, and sweet red pepper. Thanks a ton for posting this ;)
By using breast meat from a rotisserie chicken this was a super quick and flavorful meal. The carrot was coarsely grated and I did add in thinly sliced red pepper strips for color. This is something that I could see myself doing again. Made for Turning Over a New Leaf in the Diabetic Forum.
The sauce was great. We usually like soba noodles that we get at restaurants, however, those that we bought had a strong buckwheat flavor. We cannot hold that against this recipe! Thanks for sharing!
I mainly just made the sauce according to the recipe. It was delicious.
I passed this recipe on to a friend and she loved it as well. It's become one of my favorite 'Zaar recipes!
