Ever since I discovered canned hominy about 1-1/2 years ago (when I started making posole), I've been looking for interesting recipes that incorporate it. This is great comfort food for a cold evening. Made it as suggested, adding 1/2 teaspoon of New Mexican chili powder to give it a bit of "oomph," and topping it with a little shredded cheese. Served with a green salad, it made for a most satisfying supper!
