We had some leftover sausages and figured a simple recipe was in order. My husband loved this recipe. I added garlic with the sausage and used some leftover pureed tomatoes from my previous recipe (which included balsamic vinegar, garlic, oregano, Worcestershire and hot sauce) since I did not have a small can of tomatoes. Simple to make and my onions were done before 60 minutes but that may be because my onions were small and I use convection to bake with.
I used honey sweet onions, and it was very nice! The flavors went together wonderfully, and the spicy zip from the filling was just right. The tops started to get black with 20 minutes yet to go, so I tented some foil over the tops and it came out perfectly. Thanks for sharing!
Wow, what a wonderful recipe. We enjoyed this tasty comfort food very much. I stuffed one onion for myself and I also stuffed a red pepper for my dh. Both versions were excellent. The hot italian sausage gave the dish a nice heat , we really enjoyed all the flavors, they complimented one another beautifully. Thanks for sharing your recipe Sheynath.
