      If using frozen duck, thaw out over night
    2. 2
      Preheat oven to 350°F.
    3. 3
      Clean duck by rinsing, removing giblets, excess fat and blood
    4. 4
      Rub generously with olive oil.
    5. 5
      mix the pepper, paprika, Cajun seasoning, garlic clove, and seasoning salt in small dish
    6. 6
      Sprinkle mixture on the inside and outside of duckling.

      Place in oven bag.
    8. 8
      Cut 2 small slits on the top of the bag and put in oven for 1 hr and 30 minutes, or until juices run clear.
