This is excellent! Just made a 1/2 recipe as that's all the red lentils I had. If I didn't have to save it for dinner I'd eat half of it now! The flavor combination of salty and sweet is great with the earthy flavor of the lentils. It's ready in a snap and will be awesome to pack for lunch at work. I also like that the proportions are in mL and g.
this is my favorite lentil recipe ever. even better the next day! the mix of textures and salty/sweet/earthy is absolutely perfect.

Had a great yearning for lentils(!) today so luckily this was my PAC partners recipe. I loved this dish and think it would be equally good with any other kind of lentil especially Puy.
Very nice! I had trouble getting my lentils cooked just right...they were still hard for at least 5 minutes...so I may have overcooked them a bit but they still taste wonderful. I really enjoy the currants and capers and I diced my red onion and stirred it in with the parsley and like the crunch the onion gives. I do think this is much more than 4 servings...I can't eat too much at once...but if you do eat 1/4 of the recipe you'll have your full serving of fiber for the day! Thanks for this delightfully different recipe. Made for 1-2-3 hit wonders.
Well, I think this has to be one of my favorite recipes for lentils so far! I love the flavors in the dressing and will make this many more times! I ate this with Asian flavored green beans and had 3 servings, in fact I ate all of it! Thank you so much Annie!
