Spicy Orange Bran Muffins

Very delicious, healthy, orangey muffins! They had a nice consistency, not too dense, and they domed up perfectly as they baked. I did make a couple of changes: I left out the raisins, and I didn't have molasses on hand so I substituted an equal amount of maple syrup.

  1. Combine bran and buttermilk, let stand while assembling other ingredients.
  2. In bowl, combine remaining dry ingredients.
  3. In another bowl, combine egg, brown sugar, honey, molasses and oil.
  4. Mix well.
  5. Add bran mixture.
  6. Add dry ingredients.
  7. Bake in sprayed muffin tin in 375 degree oven for 20 minutes.
  8. Best served warm.
