Spicy Mac and Cheese

This spicy mac and cheese is my own recipe I came up with after becoming a vegetarian and deciding to "spice"things up a little. It's extra cheesy with a little spice. My mom, sister, boyfriend and nephews absolutely love this recipe. It's even good for the young ones as long as you use original rotel instead of hot.

Directions

  1. boil whole wheat spiral pasta until tender. drain water.
  2. add 8 oz of velveeta and can of rotel tomatoes.
  3. stir everything together until cheese is melted.
  4. let cool down for about a minute or two and serve.
