- 1⁄2 cup unsalted butter (4 oz.)
- 1 cup sugar
- 1⁄2 cup water
- 1 cup raisins
- 2 cups flour (mix of whole wheat & all-purpose)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup plain yogurt
- 1⁄2 cup chopped walnuts (or pecans or almonds)

Seasonings
- 1⁄2 teaspoon crushed nutmeg
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon clove
- 1⁄2 teaspoon cardamom
directions
- Heat the butter, sugar, water, raisins and the seasonings, until bubbly.
- Let the mixture cool for about an hour.
- Mix the flour, baking soda, baking powder and salt.
- Beat the flour mix, yogurt, and the nuts into the cooled down liquid mixture.
- Grease and flour a large loaf pan or a 9x9" baking dish.
- Preheat the oven to 350°F.
- Bake for 35 minutes until done.
- Healthy Alternative: Substitute all or part of all-purpose flour by whole-wheat flour and some semolina.
- Add some pureed fruit like apples or bananas to reduce fat and sugar.

OUTSTANDING LOAF! I can't tell you how much I love the taste of this and appreciate your sharing it on Zaar. I can already picture myself making this again very soon! I started off around 4:30pm, i.e, making the mixture of margarine(I substituted this for butter), sugar, water, raisins and the seasonings. In the seasonings, I did not have nutmeg on hand, so, I doubled the quantity of cinnamon(used 1 tsp. instead of 1/2 tsp.) and used 1/2 tsp. each of cloves and green cardamom. Then, as I had to cook alot for tomorrow's Diwali dinner, I kept this mixture aside for 7 hours! I guess the longer you keep it aside, the more aromatic and sinfully yummy it becomes - I tasted it before pouring it into the mixture - yum - I licked the tip of my index finger clean:) At 11:30pm, I continued with this recipe. I used a mixture of 1 1/2 cup whole wheat flour and 1/2 cup all-purpose flour. For the nuts, I used walnuts. I had planned to use banana puree in this, but since I ran out of bananas, I decided to go for apple puree. But, when I tasted the mixture i.e., just before baking it in my AMC Dutch oven, I realised it tasted - yum! So, I didn't want to puree the apples, my mind is bent on using banana puree to be honest:) Hence, I went ahead and greased my loaf pan and baked this in my AMC Dutch oven for 1 hour(the AMC Cookware's Dutch oven takes double the time to bake than what a usual oven takes, but somehow, I'm stuck to my AMC). At 12:30 am, my house smelt like a bakery - so aromatic and spicy- just like a spice essence bottle had been opened! I loved the smell and I inhaled it to the fullest capacity of my lungs:) Mmmmmmmm, you know, its 12:40am right now and the flavourful aroma is still wafting through the air. I tasted it, ofcourse, now how couldn't I do that:) I am so happy I have a new loaf to share tomorrow at my Diwali tea party! Thank You! You really must get an award for this recipe. My dad can't wait for his evening chai tomorrow because he's already in love with the smell of the loaf.
