- 0.66 lb red lentils
- 1⁄8 cup butter
- 1 small onion, chopped finely
- 1 garlic clove, crushed
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon ground coriander
- 1⁄4 teaspoon ground turmeric
- 1⁄4 teaspoon cayenne pepper
- 1⁄2 chicken stock cube
- 1 tablespoon parsley, chopped (or more if liked, flat leaf or curly)
directions
- Place the lentils in a large saucepan of boiling water (adding stock at this stage could make the lentils too hard and unpalatable) and cook until just tender, then drain.
- Meanwhile, melt half the butter in a large frying and cook the onion, garlic and spices together until the onion is transparent and soft.
- Add the lentils, the crumbled stock cubes and the remaining butter to the onion. Combine well and cook until heated through.
- Remove from the heat, stir in the parsley and serve.

I've been trying to find healthier recipes for my family, so we tried this one. This tasted quite like taco filling to us (in fact, my husband took the leftovers from lunch and made tacos with it for dinner!) Being a "bean novice" I'm not sure that I cooked the lentils correctly, and there's always the possibility that I came onto this site looking for "something", and this didn't quite hit whatever that something happened to be in my mind. This certainly wasn't bad, but it wasn't a favorite either. If you're looking for an alternative to ground meat filling for tacos, then this is a perfect recipe!
