This thick savory ragu with italian sausage in penne pasta will be sure to satisfy that pasta craving. Be sure to cook the sauce down to a thick reduced consistency. Add more chili flakes to make as spicy as you like!

  1. In frying pan, add ½ tbsp oil and brown sausages, approximately 5 minutes. Add ¼ cup of water and cover. Let cook for approximately 8 minutes, remove from pan and set aside. In same pan, add remaining oil and onions and sauté for 3 minutes. Add mushrooms and a pinch of salt and sauté for 3 minutes. Add garlic, anchovy paste and chili flakes and cook for 5 minutes. Add tomatoes and sauté for 5 minutes more. Cut the sausages into diagonal slices and add them to the pan along with the tomato sauce and cook till sauce is thickened, approximately 8 minutes on med/high heat. Remove from heat and add the basil and parsley. Drain pasta and add to the sauce. Serve topped with grated parmesan.
