ingredients

  • 1 medium onion, diced
  • 1 fresh jalapeno, finely diced (seeds and all , I said spicy, You can leave the seeds out)
  • 2 cups diced grilled pineapple
  • 14 cup spiced ginger marmalade (MacKay`s brand is what I use)
  • 12 red pepper, diced
  • 1 lime juice

directions

  • Stir all ingredients together.
  • chill to blend flavors and serve.

  2. I think this would have been better if it had been diced a little smaller and served with something other than as a dessert (it is definately NOT a dessert).

  4. This was my first attempt at making any type of salsa, but I must say I really enjoyed it. It really complimented the ribs I cooked. I omitted the jalapeno seeds (because of my children), but next time I'll leave them in. I did have to make one substitution. The only type of marmalade I could find was orange, so I had to use it. I did add in some ginger though. I'm going to keep looking for the spiced ginger marmalade as I would really like to try the recipe using it. I also used a red onion for additional color. Thanks for sharing the recipe!
