Spicy Cuban Chicken

"I got this from a friend at church; I haven't made it yet, but she brought it to a potluck and it was so yummy I had to ask for the recipe. It is credited to The Bean Education & Awareness Network. Prep time includes marinating time. ****update**** I messed up the marinating once I finally made this and left out the garlic and red pepper in the marinade. Instead I put the garlic in while sauteing the chicken and put in the red pepper with all the other spices. This made it pretty spicy, but good!"

  • Combine dressing, garlic and red pepper in a 2 cup glass measure or medium glass bowl. Place chicken in large glass bowl, pour dressing over chicken, cover and marinate at least 30 minutes, but overnight is fine.
  • Remove chicken from marinade, drain well, discard marinade. Heat oil in large skillet over medium high heat until hot. Add chicken, cook 5-7 minutes, stirring until chicken is slightly brown, spooning off any excess liquid.
  • Add bell peppers, onion, oregano, pepper, and cumin. Cook, stirring, 4-5 minutes or until vegetables are tender.
  • Add rice, black beans and tomatoes. Cook 2-3 minutes more or until thoroughly heated.
  • Garnish with cilantro, serve immediately.

  1. We are trying to incorporate more legumes and whole grains into our diet. My husband loves spicy foods but I'm not as much of a fan as he. I used a regular Italian dressing instead of low fat and used brown rice. Other than that I followed the recipe. I wouldn't call this particularly spicy although enough for me that I topped mine with a small amount of shredded cheddar cheese. I will make this again because it seems like it can be more flavorful without being much more spicy. Just needs some tweaking. It says it makes 6 servings but I would say more like 10 since just between the rice, beans and tomatoes there is almost 14 cups of food without the pound of chicken and the vegetables. We have leftovers!
     
  2. This was really good and easy to prepare. I used a red and a green pepper for color. It didn't have anywhere near enough spice though, so I had to add some more red pepper flakes. I will add more spices next time. I live in Iowa, and we don't have anything Cuban around here, so this was fun to try. Thanks for posting.

<p>I live in a part of North Carolina that's close enough to Raleigh to commute, but far enough away to seem like another world. I am loving small town living; I spent the first 38 years of my life as a suburbs girl in Florida. I love going to a small church and the fact that in a few years here we almost always run into someone we know when we go into town. I can't imagine living anywhere else now! <br />I work for a major computer storage company keeping one of our larger customers happy from a support (after the sale) perspective. My title doesn't really explain what I do, but the best way I've found to describe my work is that if everyone did what they were supposed to do, I would be out of work! <br />I don't get to cook as much as I'd like to, but when I can, I love to try new recipes! I'm always looking for great make ahead or CrockPot recipes that accomodate my crazy work. I love the feature on 'Zaar where you can find recipes by searching for an ingredient. I've come up with more dinner ideas that way! <br />I'm blessed with a husband who is always willing to try new things, but who is also happy to eat PBJ every night.
