This was really very quick, easy to make and tasty. I only added one cup of vegetable stock as this was enough. Next time I will not be using the star anise as I do not like the taste but otherwise this recipe is a keeper. Thank you so much for submitting.

  1. Melt butter in a saucepan, add mushrooms, cover and cook until soft.
  2. Stir in couscous, salt, turmeric, cumin, coriander, anise, cinnamon and chives.
  3. Cook for 1-2 minutes.
  4. Pour vegetable stock over the mixture, cover and set aside for 5 minutes until the liquid is absorbed.
  5. Fluff up and serve.
