a delicious alternative for breakfast and quite filling!
- 2 slices whole wheat bread, sliced thin
- 3 tablespoons light cottage cheese (I use weight watchers)
- 1 tablespoon sambal oelek
- 1⁄2 teaspoon Splenda granular (optional)
- 1⁄2 small tomatoes
- Mix cottage cheese with sambal oelek and splenda. Splenda will make this a little sweet if it's too plain for you.
- Slice tomato and place on bread.
- Top with cottage cheese mixture.
- Toast until brown.
