Spicy Coleslaw

  • In a large bowl, combine cabbages, red and yellow peppers and carrot until well blended.
  • Process remaining ingredients in a blender until smooth and adjust seasoning.
  • Pour dressing over vegetables and toss to combine.
  • Recheck seasoning and serve.

  1. Great slaw! I took the easy way out and used a 16-ounce package of slaw mix that included green cabbage, red cabbage, and carrots. I subbed a serrano for the jalapeno and used the food processor, rather than the blender, to prepare the dressing. I didn't worry too much with mincing or dicing the dressing ingredients very finely (just coarsely chopped), since I knew the processor would finish the job. We really enjoyed this flavorful slaw--thanks for sharing the recipe!
     
  2. I brought this to a friend's Fourth of July celebration with his family. Two other traditional coleslaws were also on the table. The one I brought was GONE while the others were only half eaten! They all loved the jalapeno kick mixed with the garlic and cilantro. Great recipe, and definitely one I'll use over and over!

  4. Man-oh-man! This cole slaw will be on my list of summer regulars! It's got just enough heat and lots of great blended flavors. Based on my own likes and what I had in the cupboard, I used about 1/4 C cilantro, low-fat mayo, one 3" jalapeno, about 1/4 C red wine vinegar, 2-3 T Worcestershire, and about 1/4 C bottled fresh lime juice. Didn't have any cumin seeds. My DH insisted on having "just a taste" (which turned into about 2cups!) before dinner. I served it with my own version of tandoori chicken (BBQ'd) and a salad similar to the Mango Cucumber Salsa (recipe #131641). What a meal!! And it even fits into our WeightWatchers lifestyle.
