Spicy Cold Soba Noodles

"I make this quite often. We love it; it has the right amount of spiciness, and you can adjust the spiciness to fit your tastes. We also use this sauce as a dip for spring rolls or egg rolls, or as a sauce for broccoli or other stir fried Asian vegetables."

directions

  • Heat soy sauce until reduced by half.
  • Turn to low and add molasses.
  • Warm briefly and transfer to bowl.
  • Add remaining ingredients except noodles.
  • Add salt to taste.
  • Boil noodles about 3 minutes.
  • Drain and plunge in ice water.
  • Drain and rinse.
  • Combine with sauce and chill.

  1. Delicious!! I did cut down the sesame oil by about half (trying to watch my fat intake) and didn't miss it at all. I added some chopped red pepper for color, as well as some sesame seeds for crunch. I found that the amount of sauce was enough for a whole pound of soba. Fantastic and very simple dish, one I will definitely make again! Thanks for posting!!
     
  2. Yummy and my friends enjoyed it. But I think the amount of sesame oil is too high. I used 1 tblsp and it seemed enough to me. I tried it both with tahini and peanut butter. I prefer tahini and it mixed in better. I had to heat the sauce in the microwave to get the peanut butter to mix in with the sauce properly. Very good though!
     
  3. This is just terrific! I had to cut the chili oil waaay down - she is very sensitive to all things hot. What is most interesting is the use of tahini instead of peanut butter - that really intensifies the sesame taste. Had to make a substitution or two, no soba in the house, so used about 4 oz. of Chinese noodles + 4 oz. angel hair. It was still fine so the recipe works even if you don't have absolutely all the ingredients. Happy slurping!

  5. This is actually from the FoodNetwork website. A recipe from the Two Hot Tamales. Excellent prepared as written. I have added chicken or tofu . Also matchstick carrots are good added. Great to prepare ahead in the summer, or anytime!
