      This was a little too sweet and bland for us. DH refused to finish his. I think it would be better with the mentioned Thai chilies and maybe some fish sauce? You couldn't ask for easier prep, however. It went together really fast and easily. I used light coconut milk, and it was still very coconut-y, and the consistency of the sauce was good. UPDATED: While eating leftovers, I put cayenne pepper on it and a few splashes of fish sauce. It was excellent.

      Easy & deeeelicious! I was expecting spicier but that's ok. 1 child(5) liked it, the other(8) turned her nose up at the coconut. Thanks, Sistah!!

      My husband (who I expected to turn up his nose at this) actually said this chicken has good flavor! He did scrape off the coconut, but I'll take what I can get! I really liked this-I used freshly made coconut and coconut milk and really enjoyed the combo of flavors. I did halve all the peppers since we're not used to spicy food. I'm planning to make this again. Thanks!
