Spicy Chicken Pasta

- 1⁄2 cup penne pasta
- 4 chicken breasts, cut into 1-inch pieces
- 1 plum tomato, sliced
- 2 tablespoons tomato paste
- 2 garlic cloves, minced
- 1⁄4 chili flakes
- 1 tablespoon lemon juice
- 3 cups Baby Spinach
- 1 tablespoon olive oil
- salt
directions
- In a large pot of boiling unsalted water cook the penne pasta until al dente, adding the chicken during the last 2 mins of cooking.
- Reserve 1/4 cup pasta water.
- Drain the pasta and chicken, return to pot.
- In the pot, add the tomato , tomato paste, garlic, oil ,chili flakes and spinach. Season with salt and toss it well.
- Cook over medium heat tossing until spinach is barely wilted about 1 minute.
- Remove pot from th heat, stir in the the lemon juice and enough pasta water to make a thin sauce that coats the pasta.
- Season with salt if necessary and serve immediately.
