Had some leftover rice. This is what developed. Hubby said we could keep this one.
- 1⁄2 cup white rice
- 1 cup vegetable broth
- 1 (8 ounce) can kidney beans, drained and rinsed
- 1⁄2 cup salsa con queso (I Used Tostitos)
- 1 green onion, chopped
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon cajun spices
- Cook rice in vegtable broth as package directs except use broth instead of water.
- Stir in Salsa conqueso, onion,garlic powder& cajun spice.
- Serves 3.
