Spicy Carrot Soup

"A delicious, healthy soup with a hint of (Turkish) spice, perfect for both dieters and vegetable nuts. Tips: It is best to chop the carrots and the onions and finely as possible, this way they will cook faster and give the soup a much better falavour and texture."

  • Finely chop onions and lightly fry in the butter until brown.
  • Finely chop carrots and place both the fried onions and chopped carrots in a pan with 400ml water.
  • Add the lentils and cook until the carrots are soft.
  • Add the Turkish curry powder, mixed spice, and corriander to the pan.
  • Simmer for 40mins.
