This is something I came up with when I was wanting an easy recipe with spicy meat to put on burritos. Yummy, but please be warned, this is pretty spicy.
- 3 -4 lbs beef roast
- 1 package fajita seasoning mix
- 1 jar pepperoncini pepper
- Put roast in your crockpot and sprinkle half the package of fajita seasoning mix over top, then turn roast over and sprinkle other half.
- Then pour the whole jar, including liquid, onto the roast and cook on high for 4-5 hours, or low 9-10 hours.
I used two jars of "extra spicy" pepper rings because my husband and I like them hot. I served mine on toasted hoagie rolls with melted swiss cheese!
This is a delightfully spicy treat, especially for those of us who love a spicy zing to our food! It is not TOO spicy, but a unique and yummy way to make roast (sooo easy, too!). I serve this for dinner one night, and then shredd the leftovers (while the meat is still warm) to serve in my Spicy Southwest Beef Enchiladas (#89067)the next night (complete with the cooked pepperoncini's). This was quite good and VERY easy! It made wonderful burritos! Didn't change the recipe at all. Served it on flour tortillas with cheese and had a salad on the side - everyone loved it! Thanks for sharing! Kathi
