From Caribbean Choice's Trinidad and Tobago section.
- 1 large red snapper
- 4 tablespoons butter or 4 tablespoons margarine
- 2 cups chopped tomatoes
- 1 cup white wine
- 4 ounces matouk's green seasoning
- 2 teaspoons matouk's west indian hot sauce
- Melt butter and saute green seasoning.
- Add chopped tomatoes, salt, hot sauce and wine.
- Place fish in a greased baking dish and add sauce.
- Bake at 350° for 40 minutes. Baste with sauce during cooking.
