Simple and tasty...my kind of recipe! I used a combination of sharp cheddar and mozzarella cheese and added some granulated garlic and onion powder to the eggs. The tomatoes add the perfect amount of spice and I can't wait to try this using hot sausage. Thanks for sharing, Nimz! **Make for PRMR Holiday Special**

This was so yummy. Used egg beaters and low fat cheese. Best brekkie I've made in a long time. Thank you for the recipe!

We have chickens an always have a ton of eggs to use up. This dish was awesome loved the Rotel tomatoes w/the chilies and the egg dish cooked up perfectly in the oven, I do not eat ham but my dh does, so I mixed everything except the ham and once I poured it into the dish I added ham to half the dish and pressed it down into the egg mixture and added deli turkey to the other half, after cooking we topped it with a little more spice by adding fresh salsa to the top thanks so much!

Easy tasty recipe. I have a hard time finding Rotel tomatoes so had to use a fresh tomato and spiced it up with Mrs Dash Chipotle spice. Cut the recipe back to two eggs. Lovely flavor loaded breakfast. I used a low fat Jalapeno Jack Cheese

We really enjoyed this for a special breakfast. The rotel adds a spicy twist to the omelet. I like the idea of a baked omelet which is a fuss-free way to serve a group of people.

I had a can of rotel with diced jalapenos that I needed to use up. Very simple and very good. Thanks.

This was great! I made it today for breakfast and both my husband and I loved it. I think next time I'll add some mushrooms or other veggies to it, but otherwise FANTASTIC! Thanks for the recipe!

:yummy:!!! This was perfect for a nice late breakfast!! Instead of ham, used turkey pepperoni and some low-fat mozzarella. Thanks Nimz! :)

Made this exactly as directed and it was wonderful! Easy peasy and so delicious and clean up was a snap! What a darn near perfect recipe! Thanks so much for posting Nims and congrats on the football pool win!! UPDATE 11/28/07: We made this last night with Egg Beaters, 2% reduced fat cheese and low fat packaged cubed ham and it was GREAT! No difference in taste or texture, and so much healthier! We will definitely be making this a lot more often now!

Delicious! This quick and easy omelet is full of flavor. The Rotel tomatoes give it a wonderful flavor boost. I loved the ease of preparation. I served this topped with sour cream and salsa. My family loved this and claimed it a "winner". Thanks Nimz, and congratulations on winning the Football Pool.

Outstanding! Delicious! The omelet is fluffy and light. Spicy (not too spicy but very flavorful) and cheesy. And it's incredibly easy to make. I drained the can of tomatoes and sprinkled extra cheese on top of the egg mixture before baking. I had it tonight with some sliced cantaloupe and honeydew melon on a side for a light but very filling dinner. I can't wait to play around with the ingredients but this recipe is PERFECT as is and I will be making it often. Thanks Nimz!

Very tasty easy recipe. I used old cheddar cheese instead. The rotel tomatoes gave it just the right kick. Thanks

Easy & tasty, sort of like a crustless quiche. Think I would add a bit of garlic powder with the salt & pepper next time. I used cheddar cheese 'cause I already had it & it needed using up, but I really like colby & will have to try that next time. The closest sized pan I had was a 6x6 which worked okay, but I think I would have liked how the eggs cook better in the bigger pan. I think this would make a great filling for breakfast burritos, but ran out of tortillas so I didn't get the chance to try it yet, next time maybe. Thanks for posting.
