  • Preheat oven to 375°; grease muffin tin.
  • In a mixing bowl, beat eggs; add in milk, brown sugar, oil, and vanilla; blend well.
  • Add in bran cereal, apples, raisins, and walnuts; stir to mix well.
  • In another mixing bowl, combine the remaining ingredients; mix well.
  • Add bran mixture to flour mixture; stir just until blended.
  • Spoon batter into prepared muffin pans, dividing evenly.
  • Bake at 375° for 20 minutes or until firm to touch.
