This is from my Eat Well Stay Well cookbook. I haven’t tried it yet, but I’m typing it up for ZWT II. Pecans would probably work well too. I need to make these for my dad. I’m sure he’d love them! Makes 2 cups

  1. In a skillet, heat the oil over moderate heat. Add the walnuts, tossing to coat.
  2. Add the sugar, salt and cayenne, and cook, stirring constantly for 8 minutes or until nuts are well coated and sugar has caramelized.

I just got done making these tasty little nuts. I'm going to add them into gift baskets for the Holidays. Really good flavor. However, I did taste them after they were done cooking and thought they needed a bit more flavor so I added more cayenne and salt while they were still warm.

Wonderful flavor. I added more cayenne because we like things spicy. Watch these closely so they don't burn. These were very quick and easy.

This was quick and easy! I enjoyed the flavor of the nuts. The sugar started to brown really quickly, I think the heat was too high. Thanks!
