My kids love sweet potatoes but just having them steamed or baked is getting a little tired for them, so I came up with something a little different for dinner the other night and they loved them. EDIT: These will be soft. I suppose if you wanted them crisp you'd have to slice them much thinner.

  1. Preheat oven to 400 degrees farenheit. Peel the potato and slice into 1/2" thick slices.
  2. Lay slices out on a parchment lined baking sheet. If you don't have parchment paper, feel free to use cooking spray, but expect them to still stick a bit.
  3. Mix the cinnamon sugar in a small bowl, then sprinkle over potato slices.
  4. Bake 30 minutes or until tender.

These sound yummy. What a great healthy snack! Just want to say that to get them crisp, toss with 1-2 tsp oil first and cook at 500 on the lowest shelf, turning when brown on the bottom. These might be a little thin for that method; I would try cutting some 1/2" to 1" thick, or in wedges, and see what works best.

We loved these. It's a quick and easy way to serve sweet potatoes without all the fuss of making a sweet potato casserole, yet still having that same great flavor. Thanks for sharing this winner, DbKnadler!

I make these a lot and love them. The trick to crispier "chips" is to space them out pretty well on the sheet (don't crowd).
