Spiced Roasted Strawberries

ingredients
- 500 g strawberries, husks removed and washed, if they're big, just cut in half
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon caster sugar
- 1 vanilla bean, split with the seeds scraped out
- fresh cracked black pepper
directions
- Place strawberries in a large ovenproof dish, stir in all the ingredients making sure the strawberries are well coated.
- Roast in a moderate oven for 10 to 15 minutes.
- Serve immediately with plain vanilla ice cream, or to be really decadent, a large dollop of King Island Cream.
- Note: As fresh vanilla bean pods are expensive (thanks very much to Coca Cola), you can substitute vanilla sugar or vanilla essence, but for a real treat, save up for the fresh pods.

Originally from Sydney, I have been living in WA for the last 20 odd years interspersed with stints in the UK, Bougainville PNG, and SE Asia. I have been in the Pilbara for the last couple of years.
I love cooking but these days, due to the number of hours I work I have little time to indulge in anything that requires long cooking or preparation.
My alltime favourite cookbook is the Complete Asian Cookbook by Charmaine Solomon. I've had one since it was first published in 1976 - I'm now on my THIRD!!!!!
As an avid collector of cookbooks my shelves are groaning, so I use the net quite a bit.
I love the idea of trying well loved recipes and the feedback from ratings is great!
