- 4 tablespoons margarine, softened
- 3 tablespoons sugar
- 2 egg whites
- 3⁄4 cup unsweetened applesauce
- 1⁄4 cup unsweetened apple juice concentrate (thawed)
- 1⁄4 cup natural-style peanut butter
- 1 teaspoon vanilla
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon salt (optional)
- 2 teaspoons chai tea mix
- 1 1⁄2 cups Quaker Oats (quick or old fashioned, uncooked)
- 1 cup apple
- 1⁄2 cup dry roasted peanuts, shelled
directions
- Heat oven to 350°F Lightly spray cookie sheet with cooking spray.
- In large bowl, beat margarine and sugar together until creamy. Add egg whites; beat well. Add applesauce, apple juice concentrate, peanut butter and vanilla; beat well. Add combined flour, baking soda, cinnamon, chai tea spice powder and salt; mix well. Add oats; mix well. Blend in apples and peanuts.
- Drop dough by rounded teaspoonfuls onto cookie sheets.
- Bake 15 to 17 minutes or until firm to the touch and light golden brown. Cool 1 minute on cookie sheets. Cool completely. Store tightly covered.
