  • Slice the bananas (circles) and place in a microwave dish.
  • Mix together the cashew nuts, peanuts, coconut, sugar, cinnamon and nutmeg in a small bowl.
  • Pour the orange juice and rum over the bananas, then sprinkle with the nut and sugar mixture.
  • Dot the top with butter or margarine,.
  • Microwave for 4 minutes or until the sauce is bubbly.
  • Spoon in serving bowl and add a scoop of ice cream or top with Whipped cream.
  • Freshly grated nutmeg makes all the difference to this dish. More rum can be added if preferred. Chopped mixed nuts can be used instead of peanuts.

  1. This was my second banana/ice cream recipe while "travelling" through Africa on the ZWT4 tour. I hesitated to make this because of the orange juice so I decided to use some of the coconut milk left from another recipe and I think it was a great idea. I left the flaked coconut off and used coconut rum! Served with vanilla bean ice cream and it was delicious! My daughter even loved it and she doesn't like coconut (she couldn't see it so she loved it!). Oh! like almost ALL the African recipes I've made I added a touch of cardamom in addition to the nutmeg and cinnamon!
     
  2. this is so easy to make in the micro, and is a great topping for ice cream. i did use dark rum and the freshly grated nutmeg, they gave this dish great flavor. made for zwt4.
     
  3. Made for ZWT4...This was good. The kids liked it except that the bananas were a little too soft for us. I subbed Agave Nectar for the brown sugar and it worked out fine. I made this for the African dessert challenge.
     
  4. this was good!! i didnt make the whole recipe so i put it on for less time in the microwave. in less then a minute it was already very well done... to the point of mush...but the flavor was great! made for zwt 4
     
  5. These bananas are great with low fat vanilla ice cream. The flavors are a little different and nice. I used honey in place of the brown sugar to qualify for the African dessert challenge for ZWT4. I did add a little extra sweetness to counteract the dark rum. I added 2 tablespoons of Smart Balance (wasn't sure how much it should have been since it was missing from the ingredients) and microwaved them 2 minutes. Definitely check out fresh nutmeg if you get the chance, it is so much different than the ground, and goes wonderfully with this.
