  1. Heat oil in large skillet.
  2. Mix salt and cayenne red pepper; sprinkle on chicken.
  3. Cook chicken in oil over medium heat until light brown, 15 to 20 minutes.
  4. Add remaining ingredients, except orange sections and aprsley.
  5. Reduce heat; cover tightly and simmer until thickest pieces are tender, 20 to 25 minutes.
  6. Garnish with orange sections and parsley.
  7. Nice with rice.
