- 1 3⁄4 cups all-purpose flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ginger, ground
- 1⁄2 teaspoon allspice, ground
- 1⁄2 teaspoon nutmeg, grated
- 1⁄2 teaspoon cardamom
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1 tablespoon spiced rum
- 1 teaspoon coffee, ground
- 1 teaspoon lemon zest
- 1⁄2 cup butter
- 3⁄4 cup sugar
- 2 large eggs
- 1 apple, peeled, cored, and diced
- 4 -5 bananas, slightly mashed (about 2 1/2 cups)
- 1 cup semi-sweet chocolate chips
directions
- preheat oven to 375°F.
- Grease 9 x 5 inch loaf pan.
- mix flour, baking powder, baking soda,
- salt, spices, coffee and lemon zest together and set aside.
- beat butter in large mixing bowl until soft and creamy.
- beat in sugar
- add eggs, vanilla and rum and beat until blended.
- add flour mix and beat until well blended.
- fold in mashed bananas, apple, and chocolate chips.
- pour into prepared pan.
- bake in center of oven for 1 hour 15 minutes or until toothpick inserted in center comes out clean.
- cool in pan 10 minutes.
- invert from pan and cool completely on rack.
