Spiced Apple Muffins

ingredients
- 2 cups flour
- 3 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup sugar
- 1 cup apple, peeled, chopped
- 1 egg, slightly beten
- 1 cup milk
- 1⁄3 cup oil (melted butter or shortening can also be used)

TOPPING
- 2 tablespoons brown sugar
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
directions
- Sift flour, baking powder, salt and sugar. (For extra spice, add 1 teaspoons cinnamon and nutmeg to the flour). Stir in chopped apple.
- Combine egg, milk and oil. Add liquid to dry ingredients. Mix lightly but do not beat.
- Spoon into greased muffin tins, 3/4 fgull.
- Sprinkle on topping.
- Bake in 400F oven for 15 minutes.

I will be uploading a photo of these AMAZING muffins. I am the Pastry Chef for Erly Rush Coffee House in Downtown Muskogee, Ok and I had a client ask for a Apple Cinnamon Muffin.. I opened up the Test Kitchen and these were the WINNER!!! They are going on into the pastry display Tuesday Morning.. Thank You so much for Uploading!! changes: diced apples for top garnish and I used a streusel crumb topping. 1/2 tsp nutmeg & 1/2 tsp cinnamon into batter along with the addition of a extra 1/2 c diced apples.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
