Spice Cake With Caramel Frosting

This was a lovely cake and was exactly what I was after. I did up the cinnamon to 2 tsps, but we love cinnamon, and did also add 1/2 tsp of nutmeg. The icing was truly outstanding - I could have eaten it all before it even reached the cake. A keeper.

  1. Sift together dry ingredients.
  2. Cream together shortening and sugars until fluffy.
  3. Add vanilla and then eggs 1 at a time, beating well after each egg.
  4. Add dry ingredients alternately with buttermilk.
  5. Beat 2-3 minutes using high speed of mixer.
  6. Pour into 2 greased and floured 8-in. pans.
  7. Bake in 350 degree oven 25-30 minutes.
  8. Frost when cool.
  9. Caramel Frosting:.
  10. Melt butter in saucepan then add brown sugar and cook over low heat 2 minutes, stirring constantly.
  11. Add cream and continue stirring until mixture comes to a boil.
  12. Remove from heat.
  13. Gradually blend in powdered sugar and vanilla.
  14. (Add extra cream if needed.).
