  • Sift together dry ingredients.
  • Cream together shortening and sugars until fluffy.
  • Add vanilla and then eggs 1 at a time, beating well after each egg.
  • Add dry ingredients alternately with buttermilk.
  • Beat 2-3 minutes using high speed of mixer.
  • Pour into 2 greased and floured 8-in. pans.
  • Bake in 350 degree oven 25-30 minutes.
  • Frost when cool.
  • Caramel Frosting:

  • Melt butter in saucepan then add brown sugar and cook over low heat 2 minutes, stirring constantly.
  • Add cream and continue stirring until mixture comes to a boil.
  • Remove from heat.
  • Gradually blend in powdered sugar and vanilla.
  • (Add extra cream if needed.).

  1. This was a lovely cake and was exactly what I was after. I did up the cinnamon to 2 tsps, but we love cinnamon, and did also add 1/2 tsp of nutmeg. The icing was truly outstanding - I could have eaten it all before it even reached the cake. A keeper.
     
  2. This cake came out very well. I searched for this recipe here after a coworker told me it was his all time favorite cake, and he hasn't been able to find it here in the Northeast US. Apparently it was the right one, because no a crumb was left. I made one change, by baking it in a bundt pan, rather than 2 round cake pans, as I didn't have the correct equipment. The cake cooked beautifully in 42 minutes. Many thanks for this hit. It's a keeper!
