      I made this twice, and it was fantastic both times. The second time, I subbed garbanzo beans for black bean. The only change that I made was to add a bit of chili powder.

      This was gobbled up really, really quickly by 3 people. I'll need to double it next time! Make the quinoa early as it takes some time to cool off. Thank you for posting!
