Southwest-flavored veggie or vegan burgers

Ingredients Nutrition

  • 1 (15 ounce) can black beans or 1 (15 ounce) can refried beans
  • 1 cup spent grain or 1 cup cooked quinoa
  • 13 cup masa corn flour
  • 2 eggs (optional)
  • 14 cup diced onion
  • 12 cup diced pepper (sweet, mild, or medium-hot)
  • 3 tablespoons barbecue sauce
  • 1 teaspoon cumin
  • 1 cup breadcrumbs

Directions

  1. Place all ingredients in food processor; blend until well-mixed.
  2. Form into patties, brush or spray with olive oil, and grill for 4-5 minutes per side.
