- 4 pita breads (small wholemeal)
- 2 tablespoons tomato paste
- 2 garlic cloves (minced)
- 2 tomatoes (medium sliced)
- 0.22 lb bocconcini (3 1/2oz small fresh mozzarella cheese sliced)
- 0.88 lb artichoke hearts (13 oz canned quartered)
- 0.11 lb kalamata olives (1 2/3oz pitted)
- 1⁄2 red capsicum (bell pepper sliced)
- 0.28 lb four-bean mix (4oz canned rinsed and drained)
- 1⁄3 cup reduced-fat cheddar cheese (40g/1 1/3oz grated)
directions
- Preheat oven to 230C (450F/gas8).
- Put a pita breads onto 2 non-stick baking trays and spread with the combined tomato paste and garlic, leaving a 2cm (3/4in) border.
- Top the pita breads with the tomatoes, bocconcini, artichokes, olives, capsicum, beans and cheese.
- Bake for 20 minutes or until the bases are crisp and the topping is golden.
- Cut into wedges to serve.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
