- 1⁄4 cup instant oats
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon ground ginger
- 1⁄4 teaspoon ground nutmeg
- 1⁄8 teaspoon kosher salt
- 1⁄2 cup cold water
- 1 1⁄2 teaspoons brown sugar
- 3 tablespoons milk
- 1⁄4 cup golden raisin (optional)
- 1⁄8 cup walnuts (optional)
directions
- Mix the oats, cinnamon, ginger, nutmeg, salt, raisins and water in a microwave-safe bowl.
- Microwave on high for 1-1.25 minutes, stirring every 15-30 seconds until the oatmeal has reached the desired consistency.
- Stir in the brown sugar, walnuts and a few drops of milk, serve warm.

Just like gingerbread! I slow cooked this on the stove and increased the servings by 75% to serve four. I also drizzled some molasses on top and then sprinkled a little ground cloves over it while it cooked. I added Cool Whip to it when I served it to my kids to cool off. It was great! Like eating a big bowl of Gingerbread cookies. Tastes like Christmastime!

I'm sorry, this one just didn't rock my world. I used instant whole grain oats, but did everything else exactly by the measure....and it tasted gritty, the spices didn't really meld together, etc. It sounded great when I read it, and I really wanted to love this--but I didn't. It went uneaten after a couple of bites.
